I had no clue what to call theses so baked apples will have to do.

Baked apples. Pretty simple, I know. It’s nothing fancy but pure goodness. If you’re like me, you always have tons (and I mean tons) of apples sitting in the bottom drawer of the refrigerator. Apples are one of those year round fruits that I’m always craving. But eating a plain ole’ apple can get pretty boring so I wanted to kick it up a notch.

Notch taken up.

One day after the gym I inhaled an apple and then had the perfect idea to bake the apples and them with simple, REAL ingredients. Think of these as a twist on the traditional apple pie. It’s a fun and healthier way to make, serve and eat!

(I work out for these apples.)

Yield: 8 servings

A super simple recipe for vanilla baked apples, spiced with cinnamon and brown sugar. Baked until soft and topped with homemade whipped cream!

Ingredients

    BAKED APPLES
  • 4 Gala apples (or your preference)
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon light brown sugar
  • walnuts, for garnish
  • WHIPPED CREAM
  • 1/4 cup heavy whipping cream
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375F degrees. Line a large baking sheet with a silicone baking mat or parchment paper.
  2. Cut the apples in half, then cut a small piece off the back so the apples lay flat. Using a sturdy teaspoon, or cookie scoop, core out the center. Cut off the stem. Place the apples facing up on the baking sheet. Drizzle on the vanilla, sprinkle on the cinnamon then brown sugar. Add a drizzle of honey.
  3. Bake the apples for 25-30 minutes until soft on the inside and slightly browned around the edges. Remove from the oven and sprinkle on walnuts. Serve warm with a dollop of whipped cream.
